Cheddar Bacon Muffins

Delight in these cheesy and savory Cheddar Bacon Muffins, perfect for breakfast, brunch, or as a snack.

  • 1 cup all-purpose flour
  • 1 cup shredded cheddar cheese
  • 4 slices bacon (cooked until crispy and crumbled)
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup milk
  • 0.3 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  2. Cook the bacon in a skillet until crispy, then crumble it into small pieces.
  3. In a large bowl, whisk together the flour, baking powder, and salt.
  4. In another bowl, beat the eggs and add the milk and vegetable oil, whisking until smooth.
  5. Pour the wet mixture into the dry ingredients, folding until just combined.
  6. Gently fold in the cheddar and crumbled bacon.
  7. Scoop the batter into the muffin tin, filling each cup about two-thirds full.
  8. Bake for 18-20 minutes, or until golden brown and a toothpick comes out clean.
  9. Cool in the tin for a few minutes before transferring to a wire rack. Serve warm or at room temperature.

Notes

For a healthier take, swap in whole wheat flour or low-fat cheese. Turkey bacon works well too!
