Cheese and Chive Pancakes

Delightful pancakes blending cheesy goodness and fresh chives, perfect for breakfast or a snack.

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/4 cup chopped fresh chives
  • Butter or oil for cooking

Instructions

  1. Whisk together the flour, baking powder, and salt until well mixed.
  2. Combine the milk, egg, and melted butter in another bowl, mixing until well blended.
  3. Pour the wet mixture into the dry ingredients and stir gently to combine; it’s okay if there are a few lumps.
  4. Fold in the shredded cheese and chopped chives until evenly distributed.
  5. Heat a non-stick skillet over medium heat, adding a small amount of butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  8. Repeat until all the batter is used, adjusting heat as necessary.
  9. Serve warm, garnished with extra chives or toppings as desired.

Notes

For best results, ensure the skillet is preheated well. Adjust the batter thickness with more milk if needed.
