Cheesy Egg Toast

A delightful blend of cheesy goodness and perfectly cooked eggs on golden-brown toast, ideal for breakfast or brunch.

Ingredients

  • 2 slices bread
  • 1 large egg
  • ½ cup (2 oz) grated cheese (cheddar, pepper jack, or gruyere)
  • 1 teaspoon finely chopped fresh herbs (thyme or rosemary)
  • Salt and black pepper, to taste
  • Pinch of cayenne pepper (optional)

Instructions

  1. Start by lightly toasting the bread, or broil it for 1 to 2 minutes on each side.
  2. Preheat your oven to 400°F, or set your toaster oven’s cooking rack to the bottom and select the ‘BAKE’ setting.
  3. Crack the egg into a small bowl and beat it with a fork until combined.
  4. Mix in the grated cheese and finely chopped herbs, if using. Season with salt and black pepper.
  5. Spread the egg and cheese mixture generously over the bread.
  6. Bake for about 10 to 12 minutes, or until puffed and lightly browned.

Notes

Feel free to swap out the bread for sourdough or whole grain. If using dried herbs, adjust the quantity accordingly.
