A versatile and quick breakfast dish featuring cheese, eggs, and your choice of vegetables, perfect for busy mornings or leisurely brunches.

Ingredients

Scale
  • 2 slices Bread (thicker slices like sourdough or whole grain)
  • 2 large Eggs (substitute with egg alternatives for dairy-free)
  • 1/2 cup Cheese (Cheddar, mozzarella, or pepper jack)
  • 2 tablespoons Fresh Herbs (Chives, parsley, or cilantro)
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1/4 teaspoon Cayenne Pepper (optional)
  • 1 cup Sautéed Vegetables (Spinach, mushrooms, or tomatoes)
  • 2 tablespoons Honey (optional for sweet version)
  • 1 cup Fresh Fruits (optional for sweet serving)

Instructions

  1. Preheat your oven’s broiler to high.
  2. Toast your slices of bread until they achieve a golden brown and crispy texture.
  3. In a skillet, sauté your choice of vegetables until they’re tender.
  4. In a bowl, whisk together the eggs, cheese, fresh herbs, salt, pepper, and optional cayenne until well combined.
  5. Layer the sautéed veggies over the toasted bread.
  6. Pour the egg mixture over the veggies.
  7. Place the assembled toast under the broiler for about 3-5 minutes, or until the eggs are set and the cheese is bubbly and golden.
  8. Serve with a drizzle of honey and fresh fruit on the side for a delightful sweet twist, if desired.

Notes

For added flavor, mix in spices like smoked paprika or garlic powder in your egg mixture. Experiment with different types of bread for best results.
