  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar, mozzarella, or your preference)
  • 1/2 cup diced vegetables (like bell peppers, spinach, or onions)
  • Salt and pepper to taste
  • Cooking spray or muffin tin liners

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin with cooking spray or liners.
  2. In a mixing bowl, whisk together the eggs until well beaten.
  3. Stir in the cottage cheese, shredded cheese, and diced vegetables. Season with salt and pepper, and mix until combined.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 20-25 minutes, until set and just beginning to turn golden on top.
