Cheesy Muffin Tin Cottage Cheese Egg Bites

Delightful, protein-packed egg bites perfect for breakfast or snacks, customizable with your favorite veggies and cheese.

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (bell peppers, spinach, onions, etc.)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a muffin tin with cooking spray or oil.
  2. Whisk together the cottage cheese and eggs until well combined.
  3. Stir in the shredded cheese along with your diced vegetables, salt, and pepper. Mix thoroughly to ensure everything is evenly distributed.
  4. Pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
  5. Bake in the preheated oven for 20–25 minutes, or until the bites are set and lightly golden on top.
  6. Allow them to cool for a few minutes before gently removing them from the tin. Enjoy warm or store for meal prep!
