Cheesy Muffin Tin Cottage Cheese Egg Bites

Delicious, protein-packed egg bites made with cottage cheese and customizable ingredients, perfect for busy mornings or snacks.

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (spinach, bell peppers, onions)
  • Salt and pepper to taste
  • Cooking spray or muffin liners

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your muffin tin with cooking spray or line it with muffin liners.
  2. Whisk together the cottage cheese and eggs until smooth in a large bowl.
  3. Add in the shredded cheese, diced vegetables, salt, and pepper. Mix until well combined.
  4. Pour the mixture into the muffin tin, filling each cup about 3/4 of the way full.
  5. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and slightly golden on top.
  6. Allow the bites to cool for a few minutes before gently removing them from the tin. Serve warm or store for later!

These egg bites can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 3 months.
