Cheesy Potato Egg Scramble

A quick and comforting dish that marries creamy eggs with crispy potatoes and melted cheese, perfect for brunch or a cozy family dinner.

  • 2 medium potatoes, diced
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Optional: cooked ham or bacon, chopped
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter
  • Chopped green onions for garnish

Instructions

  1. In a large skillet, heat the olive oil or butter over medium heat.
  2. Add the diced potatoes and cook, stirring occasionally, until they turn golden and crispy—about 10-15 minutes.
  3. While the potatoes are cooking, crack the eggs into a bowl and whisk them together with salt and pepper until fully combined.
  4. Once the potatoes are crispy, push them to one side of the skillet.
  5. Pour the whisked eggs into the vacant side of the skillet. Scramble them gently until they’re cooked through.
  6. Stir in the cheddar cheese, and if using, add the optional chopped ham or bacon. Mix until the cheese melts and everything is evenly combined.
  7. Serve hot, garnished with chopped green onions for an extra burst of flavor and color.

Notes

For extra flavor, soak diced potatoes in water before cooking. Experiment with different cheeses or add vegetables for a nutritious twist.
