Cheesy Potato Egg Scramble

A comforting dish combining crispy potatoes, fluffy eggs, and melted cheddar cheese, perfect for breakfast or any meal.

  • 4 eggs
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cooked ham or bacon (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish (optional)

Instructions

  1. Start by heating olive oil in a large skillet over medium heat.
  2. Add the diced potatoes, cooking until they are crispy and golden brown, about 10-15 minutes, seasoning with salt and pepper.
  3. While the potatoes are cooking, whisk the eggs in a bowl until well combined.
  4. Once the potatoes are ready, pour the beaten eggs into the skillet.
  5. Gently stir everything together, scrambling the eggs with the potatoes until the eggs are nearly set.
  6. Add in the shredded cheddar cheese and the optional ham or bacon, stirring until the cheese melts and the eggs are fully cooked.
