Cheesy Sheet Pan Breakfast Burritos are a delightful way to start your day, perfect for busy mornings or feeding a crowd.

  • 12 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup mozzarella cheese (optional)
  • 1 cup cooked breakfast sausage or bacon (chopped)
  • 1 cup diced bell peppers
  • ½ cup chopped onions
  • 1 cup frozen hash browns (thawed)
  • Salt and black pepper to taste
  • 68 large flour tortillas

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk the eggs and milk until well blended, adding a dash of salt and black pepper to taste.
  3. Fold in the chopped sausage or bacon, diced bell peppers, chopped onions, and thawed hash browns.
  4. Pour the mixture onto a greased sheet pan, spreading it evenly.
  5. Bake for 20-25 minutes, or until the eggs are set and golden.
  6. Remove from the oven and add cheddar cheese on top.
  7. Return to the oven for an additional 5 minutes to melt the cheese.
  8. Once cooled, cut into sections and wrap in tortillas.

Notes

These burritos are best served warm. Pair with salsa, avocado, or sour cream.
