  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 flatbreads or pita wraps
  • Toppings (e.g., cucumbers, tomatoes, lettuce, tahini sauce, hummus)

Instructions

  1. In a medium bowl, whisk together the olive oil, cumin, coriander, smoked paprika, garlic powder, onion powder, salt, and pepper until well combined.
  2. Add the sliced chicken to the bowl and toss until every piece is evenly coated in the marinade.
  3. Let the chicken marinate for at least 30 minutes for flavor, refrigerating overnight for the best taste.
  4. Preheat your grill or skillet over medium-high heat.
  5. Once hot, add the marinated chicken and cook for 6-8 minutes, turning occasionally, until fully cooked through and slightly charred.
  6. Remove the chicken from the heat and let it rest for a few minutes to retain its juices.
  7. On a flat surface, lay out your flatbreads or pita wraps. Add the cooked chicken and your preferred toppings.
  8. Roll up the wraps tightly, slice, and serve immediately.

Notes

For a plant-based version, substitute chicken with tofu or tempeh. Store leftovers tightly wrapped in the refrigerator for up to three days.
