Chickpea Fried Eggs

A simple yet delightful dish of chickpeas and fried eggs, perfect for breakfast or a quick dinner.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 eggs
  • 1/4 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add the drained chickpeas. Warm them for a couple of minutes.
  2. Add the chopped sun-dried tomatoes to the skillet, stirring well to mix all the flavors together.
  3. Create two little wells in the chickpea mixture with a spoon.
  4. Crack an egg into each well.
  5. Cover the skillet with a lid and let the eggs cook until they reach your desired doneness.
  6. Sprinkle with salt and pepper to taste and serve warm.

Notes

For added flavor, consider incorporating fresh herbs or a splash of milk for creamier eggs.
