Chinese Chicken Stir-Fry

A flavorful and vibrant dish that brings a taste of home, perfect for quick weeknight dinners or meal prep.

  • 1 lb chicken breast, diced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup broccoli florets
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a bowl, combine the diced chicken with soy sauce, sesame oil, minced garlic, and grated ginger. Let this marinade soak in for about 15 minutes.
  2. Heat a pan over medium heat and add the marinated chicken. Cook until browned and fully cooked through, which should take about 7-10 minutes.
  3. Once the chicken is cooked, toss in the sliced bell pepper, onion, and broccoli. Stir-fry these for about 5-7 minutes until they’re tender but still maintain a bit of crispness.
  4. In a small bowl, mix cornstarch with water to make a slurry. Pour this into the pan, stirring as you go until the sauce thickens beautifully.
  5. Season with salt and pepper to taste.
  6. Serve hot over a bed of cooked rice.

Notes

For variations, swap chicken for shrimp or tofu, and use seasonal vegetables for unique flavors. Garnish with sesame seeds or sliced green onions.
