Chorizo and Eggs Breakfast

A flavorful and energizing start to your day, combining Mexican chorizo and scrambled eggs with fresh veggies.

Ingredients

  • 1 lb Chorizo
  • 4 large Eggs
  • 1 cup Fresh Spinach
  • 1 cup Bell Peppers, diced
  • 4 Corn Tortillas
  • 2 tbsp Peanut Butter (optional)
  • 1 Banana (optional)
  • 1 cup Oats (optional)
  • 2 tbsp Honey (optional)
  • 1/2 cup Chocolate Chips (optional)

Instructions

  1. Heat a pan over medium heat and add the chorizo. Cook until it’s beautifully browned and fully cooked through.
  2. Pour in the beaten eggs. Scramble them to your preferred doneness, stirring gently.
  3. Mix in the spinach and bell peppers, stirring until everything is well combined and the veggies are slightly wilted.
  4. Serve hot with warm corn tortillas on the side. Drizzle with honey or spread with peanut butter for an extra layer of flavor, if desired.

Notes

Use fresh chorizo for the best flavor; consider adding avocado slices or fresh fruit salad on the side.
