Cinnamon Roll Baked Oatmeal Squares

  • 1 ½ cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ¼ cup maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • For the swirl:
  • 1 tablespoon melted butter or coconut oil
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8 inch baking dish.
  2. Whisk together the rolled oats, baking powder, ½ teaspoon of cinnamon, and salt in a large bowl.
  3. Beat the egg in a separate bowl. Stir in the milk, maple syrup (or honey), melted butter, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring gently to avoid overmixing.
  5. Pour half of the oatmeal mixture into the greased baking dish.
  6. Mix the melted butter, brown sugar, and ½ teaspoon of cinnamon in a small bowl for the swirl. Sprinkle half of this over the oatmeal layer.
  7. Layer with the remaining oatmeal mixture, then sprinkle the rest of the cinnamon-sugar blend on top.
  8. Bake for about 25-30 minutes, or until the squares are set and lightly golden brown.
  9. Allow to cool slightly before cutting into squares.

Notes

These squares can be stored in an airtight container in the refrigerator for 3-4 days or frozen for long-term storage.
