Cinnamon Roll Cottage Cheese Loaf

A simple, nutritious loaf combining the creamy richness of cottage cheese with the sweet warmth of cinnamon rolls, perfect for any occasion.

  • 2 cups cottage cheese
  • 1/2 cup rolled oats
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the cottage cheese, rolled oats, honey, eggs, and vanilla extract in a blender or food processor. Blend until smooth and creamy.
  3. Whisk together the protein powder, cinnamon, baking powder, baking soda, and salt in a separate bowl.
  4. Gently fold the wet mixture into the dry ingredients. Mix until just combined—be careful not to overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake in the oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the loaf cool for a few minutes in the pan, then transfer it to a wire rack to cool completely. Slice and enjoy!

Notes

For a vegan option, replace honey with maple syrup and use a flax egg. Store leftovers in an airtight container for up to 5 days.
