Cinnamon Roll French Toast Roll-Ups

Delightful roll-ups filled with sweet cinnamon sugar, perfect for brunch or a cozy breakfast.

  • 12 slices white bread (soft sandwich bread, brioche, or challah)
  • 3 tbsp butter, softened (plus more for cooking)
  • ¼ cup light brown sugar
  • 1 tsp cinnamon
  • 2 eggs
  • 3 tbsp milk
  • 3 tbsp granulated sugar
  • 1 tsp cinnamon (for coating)
  • Powdered sugar (optional, for serving)

Instructions

  1. Flatten each slice of bread using a rolling pin or your hands.
  2. In a small mixing bowl, blend softened butter, brown sugar, and cinnamon until smooth. Spread evenly on each slice of bread.
  3. Roll each slice tightly from one end to create a log and set aside.
  4. In another bowl, whisk together the eggs and milk until combined.
  5. Heat a nonstick skillet over medium heat and melt some butter in it.
  6. Dip each roll-up into the egg mixture, ensuring they’re fully coated. Cook each roll for about 2-3 minutes on each side until golden brown and crispy.
  7. While warm, roll the cooked log-ups in a mixture of granulated sugar and cinnamon.
  8. Serve immediately, dusted with powdered sugar or drizzled with maple syrup.

Notes

Make sure to flatten the bread thoroughly to avoid tearing while rolling. Experiment with different fillings for added variety.
