  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1-2 tablespoons milk (for glaze)

Instructions

  1. Prepare the Batter: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. In another bowl, mix the milk, egg, and melted butter. Gently fold the wet ingredients into the dry ones until just combined—don’t worry about a few lumps!
  2. Make the Cinnamon Swirl: In a small bowl, combine the brown sugar, ground cinnamon, and melted butter until it’s a smooth mixture.
  3. Heat the Griddle: Preheat your griddle over medium heat and add a light layer of grease to prevent sticking.
  4. Cook the Pancakes: Pour about 1/4 cup of pancake batter onto the hot surface. Drizzle the cinnamon swirl mixture over the batter in a spiral pattern.
  5. Flip and Finish: When bubbles form on the surface and the edges look set, flip the pancake. Cook until both sides are golden brown.
  6. Prepare the Glaze: In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar, then mix in just enough milk to reach your desired glaze consistency.

Notes

To make it dairy-free, substitute with non-dairy milk. For a heartier pancake, use whole wheat flour.
