  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter

  • 2 tablespoons brown sugar
  • 1/2 cup powdered sugar
  • 1 tablespoon milk (for glaze)
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  2. In a separate bowl, whisk together milk, egg, and melted butter until smooth.
  3. Gently combine the two mixtures, being careful to leave a few lumps for extra fluffiness.
  4. In a small bowl, mix together cinnamon and brown sugar until thoroughly combined.
  5. Preheat a non-stick skillet over medium heat.
  6. Pour about 1/4 cup of pancake batter onto the skillet and sprinkle the cinnamon mixture in a swirl pattern on top.
  7. Cook until bubbles form on the surface, then flip the pancake and cook until golden brown on both sides.
  8. For the glaze, whisk together powdered sugar, milk, and vanilla until smooth and creamy.
  9. Serve the pancakes warm, drizzled generously with the sweet glaze.
