Cinnamon Sugar French Toast Muffins

Delicious bite-sized muffins that deliver the comforting flavors of French toast in a fun and easy form.

  • 6 slices of day-old bread
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 2 tablespoons melted butter
  • Additional ground cinnamon and sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Tear the slices of bread into small pieces and place them in a large bowl.
  3. In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until everything is well combined.
  4. Pour the egg mixture over the torn bread and gently stir to ensure each piece is well coated.
  5. Allow the mixture to sit for about 10 minutes so the bread absorbs the liquid.
  6. In a separate bowl, mix the brown sugar, melted butter, and a sprinkle of cinnamon together to create the topping.
  7. Spoon the bread mixture into the greased muffin tins, filling each cup about two-thirds full.
  8. Generously sprinkle the brown sugar mixture over each muffin cup.
  9. Place the muffin tin in the oven and bake for 15-18 minutes, or until the muffins are golden and set.
  10. Let them cool slightly before enjoying warm, ideally with a drizzle of maple syrup or a handful of fresh berries.
