Coffee Cake Muffins

Delicious and fluffy muffins that combine the comforting flavors of coffee cake with a crunchy streusel topping, perfect for breakfast or a snack.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour (for streusel)
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small pieces (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, mix together the flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk the melted butter, milk, eggs, and vanilla extract until smooth.
  4. Gradually pour the wet mixture into the dry ingredients. Stir gently, being careful not to overmix.
  5. In a small bowl, prepare the streusel by mixing the flour, brown sugar, and cinnamon. Add the cold butter and work it in until the mixture resembles coarse crumbs.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Generously sprinkle the streusel topping over the muffin batter.
  8. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store leftovers in an airtight container at room temperature for up to three days or freeze for longer storage. Use room temperature eggs and milk for best results.
