Cottage Cheese Blueberry Cloud Bread

A light and fluffy cloud bread featuring sweet blueberries, perfect for brunch or a guilt-free snack.

  • 1/2 cup cottage cheese, blended smooth
  • 3 large eggs, separated
  • 1 tbsp honey or maple syrup (optional)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch or arrowroot powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. Whip the egg whites with the salt and baking powder until stiff peaks form.
  3. Combine the cottage cheese, egg yolks, honey or maple syrup (if using), vanilla extract, and cornstarch in a blender. Blend until smooth.
  4. Fold a third of the whipped egg whites into the cottage cheese mixture. Then carefully fold in the remaining egg whites until fully integrated.
  5. Add the blueberries by folding them in or scattering them on top of the batter.
  6. Drop rounds of the batter onto the prepared baking sheet, allowing space between each for expansion.
  7. Bake for 25–30 minutes or until the tops are golden and spring back when touched. Allow to cool before enjoying.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Freeze for up to a month.
