Cottage Cheese Blueberry Cloud Bread

A delightful and airy cloud bread made with cottage cheese and fresh blueberries, perfect for breakfast or snacks.

  • 1/2 cup cottage cheese (blended smooth)
  • 3 large eggs (separated)
  • 1 tbsp honey or maple syrup (optional)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch or arrowroot powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. Beat the egg whites with salt and baking powder until stiff peaks form.
  3. Combine the cottage cheese, egg yolks, honey or maple syrup, vanilla, and cornstarch in a blender. Blend until smooth.
  4. Fold one-third of the whipped egg whites into the cottage cheese mixture.
  5. Carefully fold in the remaining egg whites to preserve fluffiness.
  6. Incorporate the fresh blueberries gently into the batter.
  7. Drop rounds of the batter onto the prepared baking sheet.
  8. Bake for 25–30 minutes, or until golden and springy. Let cool before serving.
