Cottage Cheese Cinnamon Roll Mug Cake

A quick and easy dessert option that captures the comforting flavors of fresh cinnamon rolls in a single serving.

  • 0.25 cup cottage cheese
  • 1 egg
  • 2 tbsp almond flour (or oat flour)
  • 1 tbsp maple syrup (or honey)
  • 0.5 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 0.25 tsp baking powder
  • Pinch of salt
  • 1 tsp maple syrup (for the gooey center)
  • 0.25 tsp cinnamon
  • 1 tbsp Greek yogurt (or cream cheese)
  • Sweetener to taste (e.g. maple syrup)

Instructions

  1. Grab a microwave-safe mug and add the cottage cheese, egg, almond flour, maple syrup, vanilla extract, ground cinnamon, baking powder, and a pinch of salt.
  2. Stir the mixture together until you have a smooth batter.
  3. In a small bowl, whisk together 1 teaspoon of maple syrup and 0.25 teaspoon of cinnamon for the gooey filling.
  4. Carefully dollop this filling into the center of the batter in your mug.
  5. Use a knife or toothpick to gently swirl the filling into the batter.
  6. Microwave on high for 60 to 90 seconds, or until the cake is set and slightly puffed.
  7. For a delightful topping, mix Greek yogurt (or cream cheese) with sweetener of your choice and spoon it over the warm cake.

Notes

Ensure the mug is large enough to prevent overflow while microwaving. You can also add a pinch of nutmeg or some chopped nuts for added flavor.
