Cottage Cheese Pancakes

  • 2 eggs
  • 1/2 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Butter or oil for frying

Instructions

  1. Combine the cottage cheese and eggs in a mixing bowl until smooth.
  2. Whisk together the flour, sugar, baking powder, and salt in another bowl.
  3. Fold the dry ingredients into the cottage cheese mixture until just combined. Avoid overmixing!
  4. Heat a frying pan over medium heat and coat it with butter or oil.
  5. Pour spoonfuls of the batter onto the pan.
  6. Cook until bubbles form on the surface, then flip and cook until both sides are golden brown.
