Crack Breakfast Casserole

A delicious and heartwarming breakfast casserole made with ground beef, eggs, cheese, and crispy hash browns.

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 6 eggs
  • 2 cups milk
  • 4 cups shredded hash browns
  • 2 cups shredded cheese
  • 1 can biscuit dough
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef with the diced onion and bell pepper until fully cooked. Drain any excess fat.
  3. In a large bowl, whisk together the eggs and milk. Season with salt and pepper.
  4. Grease a baking dish and layer the hash browns evenly at the bottom.
  5. Spread the cooked beef mixture over the hash browns.
  6. Pour the egg mixture over the beef, ensuring it’s evenly distributed.
  7. Tear the biscuit dough into pieces and scatter them on top.
  8. Sprinkle shredded cheese over the entire dish.
  9. Bake for 45-50 minutes, or until the eggs are set and the biscuits are golden brown.
  10. Allow to cool for a few minutes before slicing and serving.

Notes

Serve warm with fresh fruit, salsa, or sour cream. Leftovers can be stored in the refrigerator for up to four days.
