Crispy Breakfast Potatoes are the perfect addition to your morning routine, filled with savory flavors and satisfying crunch.

  • 800g russet potatoes
  • 1-2 tbsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika powder
  • ½ tsp smoked paprika powder
  • ½ tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper
  • -¼ tsp chipotle powder or cayenne (optional)
  • Flaky sea salt (for serving, optional)

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Wash and peel the potatoes or leave the skin on for extra texture. Dice them evenly and spread them in a single layer on a large baking sheet.
  3. Use a paper towel to remove excess moisture from the diced potatoes.
  4. Drizzle the potatoes with avocado oil and toss to coat evenly.
  5. Mix together all the spices in a bowl. Sprinkle this mixture over the potatoes, giving them another toss to ensure they’re fully coated.
  6. Roast the potatoes for 15 minutes, then toss them and roast for an additional 10 minutes with the broiler on to achieve extra crispiness.
  7. Serve warm, optionally topped with flaky sea salt for that perfect finish.

Notes

For added flavor, consider using different oils or swapping out the herbs based on what you have on hand.
