Crispy Breakfast Potatoes are golden and fluffy, seasoned to perfection, making them a perfect choice for any breakfast or brunch.

  • 800 g russet potatoes, peeled or skin-on, diced into even pieces
  • 1-2 tablespoons avocado oil for roasting
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika powder
  • ½ teaspoon smoked paprika powder
  • ½ teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • -¼ teaspoon chipotle powder or cayenne, optional
  • Flaky sea salt for finishing, optional

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Rinse the potatoes thoroughly.
  3. Dice the potatoes into even pieces and arrange them in a single layer on a large baking sheet.
  4. Pat the diced potatoes dry with a paper towel.
  5. Combine the garlic powder, onion powder, both types of paprika, thyme, oregano, sea salt, black pepper, and chipotle powder in a mixing bowl.
  6. Sprinkle the spice mix evenly over the potatoes, tossing thoroughly.
  7. Roast the potatoes in the preheated oven for 15 minutes.
  8. Toss them again and switch on the broiler.
  9. Broil for an additional 10 minutes or until crispy and golden brown.
  10. Serve immediately, sprinkled with flaky sea salt for a final touch.

Notes

For the best crisp, ensure the potatoes are dried well and spread out on the baking sheet without overcrowding.
