Crispy Breakfast Potatoes

Perfectly crispy on the outside and tender on the inside, these breakfast potatoes are a delightful start to any day.

Ingredients

  • 4 medium golden potatoes, diced into ½-inch cubes
  • 2 tablespoons olive or avocado oil
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon Old Bay seasoning
  • 4 slices bacon or smoked tofu
  • 2-3 cloves garlic, minced
  • 2 tablespoons pure maple syrup or agave syrup
  • Fresh parsley or chives, optional

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the diced potatoes. Season generously with salt, pepper, and Old Bay seasoning. Cook them for 15-20 minutes, stirring occasionally, until they are beautifully browned and crispy.
  3. While the potatoes are cooking, prepare the bacon in a separate pan until it’s crispy, or sauté the smoked tofu until golden.
  4. Once your bacon or tofu is ready, add the minced garlic to the potatoes. Cook for another 2-3 minutes until fragrant, allowing the flavors to meld together.
  5. Drizzle the maple syrup over the potatoes, tossing everything to combine beautifully.
  6. For an added pop of freshness, finish with fresh herbs before serving hot!

Notes

For extra crispy potatoes, soak the diced potatoes in cold water for 30 minutes before cooking. Feel free to customize your dish with different spices and toppings.
