Crispy Feta Fried Eggs

A delightful dish combining crispy feta cheese with perfectly cooked eggs for a simple yet flavorful breakfast or brunch.

  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Heat the olive oil in a non-stick skillet over medium-high heat until it shimmers.
  2. Sprinkle the crumbled feta evenly over the skillet.
  3. Cook the feta for 1-2 minutes, allowing it to soften and the edges to become golden brown and crispy.
  4. Carefully crack the eggs on top of the crispy feta, spacing them appropriately.
  5. Season the eggs generously with salt and black pepper.
  6. Cook for about 3-4 minutes, or until the whites are set while the yolks remain runny. Adjust cooking time for firmer yolks if desired.
  7. If you like, sprinkle the chopped parsley and red pepper flakes on top.
  8. Gently slide the eggs and crispy feta onto a plate and serve immediately.

Notes

For a dairy-free option, use vegan cheese or mashed avocado. Store leftovers in an airtight container in the fridge for up to two days.
