Delicious Banana Protein Muffins

A quick and healthy recipe for Banana Protein Muffins, perfect for breakfast or snacks, packed with flavor and nutrition.

  • 2 ripe bananas
  • 1/2 cup maple syrup
  • 1/4 cup almond butter or peanut butter
  • 2 eggs
  • 1 cup rolled oats
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas until smooth in a large bowl.
  3. Mix in the maple syrup, almond butter, and eggs until everything is well combined.
  4. Whisk together the rolled oats, protein powder, baking powder, baking soda, and salt in another bowl.
  5. Gradually stir the dry ingredients into the wet mixture, mixing until just incorporated.
  6. Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

For nut-free versions, substitute almond butter with sunflower seed butter. You can also add spices or different fruits for flavor variation.
