Delightful Breakfast Medley

A quick and versatile breakfast blend featuring scrambled eggs, overnight oats, spinach and tomato omelette, and a yogurt delight.

Ingredients

  • 4 Eggs
  • 2 slices Bread
  • 1 Avocado
  • 1 cup Spinach
  • 1 cup Tomatoes, diced
  • 1 cup Oats
  • 1 cup Fruits (of your choice)
  • 1 cup Yogurt
  • 2 tablespoons Honey
  • 1 cup Milk (or non-dairy milk)

Instructions

  1. Whisk the eggs until blended, then pour into a preheated non-stick skillet. Stir gently while cooking until fluffy. Serve with toasted bread and avocado.
  2. Mix oats with milk and honey in a jar. Stir well, cover, and refrigerate overnight. Top with fresh fruits the next morning.
  3. Heat olive oil in a skillet and sauté spinach and diced tomatoes until wilted. Pour in whisked eggs and cook until fluffy, then fold and serve.
  4. Scoop yogurt into a bowl, then top with fresh fruits and a drizzle of honey.

Notes

Feel free to substitute dairy with non-dairy milk or swap fruits based on what you have available.
