The Easiest Breakfast Potatoes Ever

A quick and delicious recipe for crispy breakfast potatoes, perfect for busy mornings or as a hearty side dish.

  • 4 cups Potatoes (russet, red, or golden)
  • 1 teaspoon Salt (sea salt recommended)
  • 1 teaspoon Black Pepper (fresh cracked)
  • 1 teaspoon Garlic Powder (or substitute fresh garlic)
  • 1 teaspoon Onion Powder (or substitute fresh onions)
  • 2 tablespoons Butter (salted or unsalted)
  • 2 tablespoons Oil (olive, canola, or avocado oil)
  • 2 tablespoons Parsley (fresh or dried)

Instructions

  1. Wash and dice the potatoes into small pieces.
  2. Heat the oil and butter in a large skillet over medium-high heat.
  3. Add the diced potatoes to the skillet and sprinkle with salt, pepper, garlic powder, and onion powder.
  4. Stir to coat the potatoes and spread them evenly in a single layer.
  5. Cook undisturbed for about 5-7 minutes until a golden crust forms on the bottom.
  6. Flip or stir the potatoes, cooking for another 10-15 minutes until golden brown and tender.
  7. Sprinkle with parsley and serve hot.

Notes

For extra crispiness, soak diced potatoes in water for 30 minutes before cooking. Store leftovers in an airtight container for up to 3-4 days.
