8 small tortillas
6 eggs
1 cup shredded cheese
1 cup cooked and crumbled breakfast sausage or bacon
1/2 cup diced bell peppers
1/4 cup diced onions

Instructions
Preheat your oven to 375°F (190°C).
Heat a skillet over medium heat. Add the diced onions and bell peppers, cooking them for about 3-4 minutes until softened.
Whisk together the eggs with salt and pepper. Pour the egg mixture into the skillet with the onions and peppers. Scramble until fully cooked, about 3-5 minutes.
Arrange your tortillas in a baking dish. Fill each tortilla with a scoop of the scrambled egg mixture, add the cooked sausage or bacon, and top with shredded cheese.
