Easy Breakfast Casserole

A hearty and versatile breakfast casserole filled with beef sausage, eggs, and bell peppers, perfect for lazy mornings or family gatherings.

  • 2 lbs beef sausage
  • 12 eggs
  • 2 cups cheddar cheese, shredded
  • 1 cup bell peppers, diced
  • 1/2 cup sour cream
  • 1/2 cup milk
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Brown the beef sausage in a large skillet over medium heat until fully cooked. Drain any excess grease.
  3. Whisk together the eggs, sour cream, milk, shredded cheddar, salt, and pepper in a large bowl until well mixed.
  4. Stir in the cooked sausage and diced bell peppers into the egg mixture until evenly distributed.
  5. Pour the mixture into the greased baking dish and spread it out evenly.
  6. Bake for 35-50 minutes or until the center is set and the top is lightly golden.
  7. Allow the casserole to rest for a few minutes before serving.

Notes
