Easy Breakfast Crunchwrap Delight

A versatile breakfast dish featuring scrambled eggs, crispy sausage or bacon, and fresh veggies wrapped in a warm tortilla.

  • 4 large tortillas
  • 6 large eggs
  • 1 cup cheddar cheese, shredded
  • 1 cup cooked sausage or bacon, chopped
  • 1 cup fresh veggies, diced (bell peppers, onions, etc.)
  • 1/2 cup sour cream
  • Hot sauce, to taste

Instructions

  1. In a bowl, whisk the eggs until they’re smooth and fluffy. Pour the eggs into a hot skillet and cook until set, about 3-4 minutes.
  2. Stir in the chopped sausage or bacon with the eggs. Sauté until everything is crispy and golden, about 5-7 minutes.
  3. Take a tortilla and layer it with the scrambled egg mixture, crispy sausage or bacon, shredded cheese, and your diced veggies of choice. Add a dollop of sour cream and a splash of hot sauce for that extra zing.
  4. Fold the edges of the tortilla toward the center to make a compact wrap.
  5. Preheat another skillet over medium heat. Place the Crunchwrap seam-side down and cook until golden brown and crispy, about 3-4 minutes. Flip and repeat for the other side.
  6. Serve fresh with sides like fruit, hash browns, or a light salad.

Notes

For extra crispiness, use cooking spray on the skillet before searing. Feel free to experiment with different meats or veggies based on availability.
