Easy Breakfast Crunchwrap Delight

A cheesy, crispy breakfast crunchwrap filled with scrambled eggs, sausage or bacon, fresh veggies, and gooey cheese, perfect for busy mornings or cozy brunches.

  • 4 large tortillas (flour)
  • 6 large eggs
  • 1 cup cheddar cheese (shredded)
  • 1 cup cooked sausage or bacon (chopped)
  • 1 cup fresh veggies (diced, such as bell peppers or onions)
  • 1/2 cup sour cream (or Greek yogurt)
  • Hot sauce (to taste)

Instructions

  1. Whisk the eggs together in a bowl until fully combined.
  2. Pour the eggs into a preheated skillet. Stir gently for 3-4 minutes until fluffy and fully set.
  3. Toss in the chopped sausage or bacon. Sauté for about 5-7 minutes until crispy and nicely browned.
  4. Take a large tortilla. Start layering it with the scrambled eggs, cooked sausage or bacon, shredded cheese, diced veggies, and a generous dollop of sour cream. Add hot sauce for an extra kick!
  5. Carefully bring the edges of the tortilla toward the center, tucking in all the delicious fillings to create a compact wrap.
  6. Heat a non-stick skillet over medium heat. Place the crunchwrap seam-side down. Cook for 3-4 minutes until golden brown and crispy. Flip and repeat on the other side.

Notes

To reheat leftovers, place them in a skillet for a few minutes on each side until heated through and crispy.
