Easy Breakfast Potatoes

A simple yet delicious recipe for crispy and seasoned breakfast potatoes, perfect for any morning meal.

  • 2 pounds Yukon Gold or red potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and dice them into small cubes.
  3. Toss the diced potatoes with the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until well-coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25–30 minutes, flipping halfway for even browning.
  6. Garnish with freshly chopped parsley and serve.
