Warm, crispy breakfast potatoes that are quick to prepare and sure to please. Perfect for brunch or a cozy breakfast.

Ingredients

Scale
  • 4 Potatoes (cut into 1/2 inch cubes)
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1 tbsp Butter
  • 1 tbsp Oil
  • 1 tbsp Chopped Parsley (fresh or 1/2 tsp dried)

Instructions

  1. Prep the Potatoes: Cut the potatoes into 1/2 inch cubes, ensuring even cooking.
  2. Heat the Skillet: Place a skillet over medium-high heat, then add the butter and oil.
  3. Cook the Potatoes: Once the oil is shimmering, toss in the potatoes, allowing them to soak up that buttery goodness.
  4. Season Well: Evenly sprinkle salt, black pepper, garlic powder, and onion powder over the potatoes. Save the parsley for garnish!
  5. Steam Them: Cover the skillet and let the potatoes steam for about 3-4 minutes.
  6. Stir and Brown: Remove the lid and gently stir the potatoes with a spatula, turning them until they achieve a beautiful golden brown.
  7. Crisp Up: Continue cooking until your potatoes develop a crispy exterior and a fluffy interior.
  8. Garnish and Serve: Just before serving, sprinkle with fresh parsley for a pop of color and flavor.

Notes

For extra crispiness, soak the cut potatoes in water for 30 minutes to remove excess starch, then pat them dry.
