Easy Dinner Casserole

A comforting and cheesy casserole that combines ground beef, pasta, and vegetables for a quick weeknight meal.

Ingredients

  • 1 pound ground beef
  • 2 cups cooked pasta
  • 2 cups shredded cheese
  • 1 can diced tomatoes
  • 1 can cream of mushroom soup
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
  3. Add the chopped onion and bell pepper to the skillet, sautéing until softened.
  4. Mix the cooked pasta, diced tomatoes, cream of mushroom soup, and the beef mixture in a large bowl.
  5. Stir in half of the shredded cheese until well combined.
  6. Pour the mixture into a greased 9×13 baking dish and top with the remaining cheese.
  7. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden brown.
  8. Allow the casserole to cool slightly before serving.

Notes

Leftovers can be stored in an airtight container for 3-4 days. Reheat in the oven or microwave.
