Easy Egg Breakfast Wraps

Quick and customizable breakfast wraps filled with scrambled eggs, cheese, and hash browns, perfect for busy mornings.

  • 6 large flour tortillas
  • 6 large eggs
  • 1 cup shredded cheese (cheddar, Mexican blend, etc.)
  • 1 cup cooked hash browns or tater tots
  • ½ lb cooked breakfast sausage or bacon
  • 1 tbsp butter or oil, for cooking
  • Salt and pepper, to taste
  • Optional: diced peppers, onions, spinach, salsa

Instructions

  1. Whisk the eggs with a pinch of salt and pepper in a bowl.
  2. Scramble in a medium-hot pan until they are just set.
  3. Cook the hash browns or tater tots until golden brown and crispy.
  4. Lay a large tortilla flat on a clean surface.
  5. Add a layer of scrambled eggs, cooked meat, a sprinkle of cheese, and a handful of crispy hash browns.
  6. Place a small tortilla cut-out in the center to help seal tightly.
  7. Fold the edges inward to create a snug wrap.
  8. Heat a skillet over medium heat and place the wrapped tortilla seam side down.
  9. Cook for about 2-3 minutes until golden brown, then flip and cook for another 2-3 minutes.
  10. Serve hot with toppings like salsa, avocado, or fresh herbs.

Notes

For fluffier eggs, add a splash of milk while whisking. You can prep ingredients the night before to speed up assembly.
