Easy Egg Roll in a Bowl

A quick and budget-friendly version of traditional egg rolls, made in a bowl with ground meat and coleslaw mix.

  • 1 lb ground pork or turkey
  • 1 bag coleslaw mix
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 2 green onions, sliced
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat. Add the ground pork (or turkey) and brown it until fully cooked. Drain any excess fat.
  2. Stir in the minced garlic and ginger. Cook for 1-2 minutes until fragrant.
  3. Add the coleslaw mix, cooking for about 3-5 minutes until softened.
  4. Pour in the soy sauce and sesame oil. Stir well and cook for another 2-3 minutes to combine flavors.
  5. Season with salt and pepper to taste. Sprinkle with green onions and serve hot.

Notes

Use low-sodium soy sauce if you are watching your salt intake. You can substitute the ground meat with tempeh or tofu for a vegetarian version.
