Easy English Muffin Breakfast Pizza

A delicious and easy-to-make breakfast pizza using English muffins, scrambled eggs, beef sausage, and melted cheddar cheese, topped with creamy sawmill gravy.

  • 1 package of English muffins
  • 8 eggs
  • 1 lb beef sausage
  • 8 oz mild cheddar cheese, thinly sliced
  • 2 cups milk
  • 1/4 cup beef drippings (add butter if insufficient drippings)
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Split the English muffins in half and place them cut-side up on a baking sheet.
  2. In a skillet over medium heat, crumble and cook the beef sausage until browned, reserving about 1/4 cup of the drippings. Drain the sausage and set aside.
  3. In a bowl, whisk the eggs with salt and pepper. Scramble the eggs in the same skillet until just set.
  4. Heat the reserved beef drippings in the skillet. Whisk in the flour and cook for 1-2 minutes until it turns a pale golden brown.
  5. Gradually whisk in the milk, about 1/2 cup at a time, until the mixture is smooth. Let it simmer for 5-7 minutes until thickened and season with additional salt and pepper to taste.
  6. Spread the scrambled eggs evenly over each muffin half, followed by the cooked sausage.
  7. Lay the thinly sliced cheddar over the sausage, then spoon a dollop of sawmill gravy over the cheese on each pizza.
  8. Bake in a preheated oven at 375°F (190°C) for 10-12 minutes, or until the cheese is melted and bubbly. Allow to cool slightly before serving.

Notes

Feel free to customize toppings with different meats or cheeses. Serve with fresh fruit or salad for a balanced meal.
