Easy Flourless Oatmeal Carrot Cake

A quick and effortless recipe for a delicious, guilt-free flourless carrot cake made with oats and honey.

  • 2 eggs
  • ½ cup honey
  • 2 carrots, shredded
  • 1 cup oats
  • ½ tsp baking soda
  • 1 tbsp cinnamon
  • ¼ cup butter, room temperature
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 180°C (300°F).
  2. In a large bowl, combine all ingredients except for the shredded carrots. Use an immersion blender to blend everything until smooth.
  3. Gently fold in the shredded carrots until they are evenly mixed in with the batter.
  4. Line a small 7×7-inch (about 18 cm) baking pan with parchment paper.
  5. Pour the batter into the prepared pan, spreading it out evenly.
  6. Bake in your preheated oven for 20-30 minutes. To check for doneness, insert a toothpick; it should come out clean.
  7. Once baked, allow the cake to cool in the pan before slicing it up for enjoyment.

Notes

Serve warm with Greek yogurt or a drizzle of honey. Store leftovers in an airtight container for up to four days at room temperature.
