Easy One-Bowl Baked Cinnamon Banana Breakfast

A delightful and easy one-bowl baked breakfast made with ripe bananas and cinnamon, perfect for busy mornings.

  • 3 Ripe Bananas (mashed well)
  • 1 cup All-Purpose Flour (or whole wheat as a substitute)
  • 1/4 cup Brown Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Ground Cinnamon
  • 1 pinch Salt
  • 1/2 cup Milk (or plant-based milk)
  • 1 teaspoon Vanilla Extract
  • 1 Egg
  • 1/2 cup Chopped Nuts (walnuts or pecans)
  • 1/2 cup Greek Yogurt
  • to taste Honey or Maple Syrup (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas until they’re smooth and creamy.
  3. Add in the brown sugar, egg, milk, and vanilla extract to the banana mixture. Mix until well combined.
  4. In another bowl, combine the flour, baking powder, ground cinnamon, and salt.
  5. Gradually mix the dry ingredients into the wet mixture, stirring gently until just combined.
  6. Fold in the chopped nuts and Greek yogurt.
  7. Pour the batter into a greased baking dish, smoothing it out with a spatula.
  8. Bake it in the preheated oven for 25-30 minutes.
  9. Let it cool slightly, then drizzle with honey or maple syrup for a touch of sweetness.

Notes

To enhance flavor, use overly ripe bananas and avoid overmixing the batter for a fluffy texture.
