Easy Spinach Cottage Cheese Flat Bagels

  • 2 cups of fresh spinach, chopped
  • 1 cup of cottage cheese
  • 1 cup of gluten-free flour (or regular flour)
  • 1 egg
  • 1 teaspoon of baking powder
  • Salt and pepper to taste
  • Optional: Garlic powder or onion powder for seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the chopped spinach, cottage cheese, egg, flour, baking powder, salt, and pepper in a mixing bowl.
  3. Mix until a dough forms.
  4. Shape the dough into bagel forms or flat rounds on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for about 20-25 minutes or until golden brown.
  6. Let cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze wrapped in plastic wrap.
