Flourless Cottage Cheese Pancakes

Deliciously simple flourless pancakes made with cottage cheese, perfect for breakfast or a quick snack.

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. Combine the cottage cheese, eggs, almond flour, baking powder, vanilla extract, and salt in a blender. Blend until smooth and well combined.
  2. Preheat a non-stick skillet over medium heat and add a splash of butter or oil.
  3. Pour a ladle of the batter onto the skillet. Cook until bubbles form on the surface, about 2 to 3 minutes. Flip and cook until golden brown on the other side.
  4. Continue with the remaining batter, adding more oil or butter to the skillet as needed.
  5. Enjoy the pancakes warm, topped with your favorite additions like fresh fruit or a drizzle of maple syrup.

Notes

For a tangy twist, substitute Greek yogurt for cottage cheese. To change the flavor, consider adding cocoa powder or blueberries to the batter.
