Fluffy Bacon and Egg Breakfast Burritos

Delightful burritos filled with crispy bacon, fluffy scrambled eggs, and vibrant veggies, perfect for breakfast or any time of the day.

  • 6 strips bacon, chopped
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • Salt and pepper, to taste
  • Optional: Hash browns
  • Optional: Hot sauce
  • Optional: Avocado

Instructions

  1. In a nonstick pan, cook the chopped bacon over medium heat until crispy. Transfer to paper towels to absorb excess grease.
  2. In the same pan, add diced bell peppers and tomatoes. Sauté for about 2-3 minutes until softened.
  3. Whisk the eggs in a bowl, then pour them into the pan. Scramble until fluffy and fully cooked.
  4. Return the crispy bacon to the pan, add shredded cheddar cheese, and stir until the cheese melts.
  5. Microwave the tortillas for about 20 seconds to soften.
  6. Place a generous amount of the egg mixture in the center of each tortilla. Fold in the sides and roll tightly to form a burrito.
  7. Toast the burritos seam-side down in the pan over medium heat for 2-3 minutes per side until golden and crispy.
  8. Serve hot or wrap them for easy meal prep.

Notes

For extra fluffiness, whisk your eggs vigorously before cooking. Customize your veggie mix and don’t skip the toasting step!
