Fluffy Banana Pancake Bites

Delightful mini pancakes that are fluffy and perfect for breakfasts or brunch gatherings.

  • 1 cup all-purpose flour
  • 1 cup milk (or a dairy-free alternative)
  • 1 egg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Coconut oil or butter (for cooking)

Instructions

  1. Mash the ripe banana in a bowl until smooth.
  2. Add the milk, egg, and vanilla extract. Mix until thoroughly combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Gradually mix the dry ingredients into the wet mixture, stirring gently.
  5. Heat a non-stick pan over medium heat and lightly grease it with coconut oil or butter.
  6. Spoon small amounts of the batter into the pan to create mini pancakes.
  7. Cook each pancake for about 2-3 minutes on each side, or until golden brown.
  8. Serve warm with your favorite toppings!

Notes

For a dairy-free version, replace milk with almond or oat milk. Use whole wheat flour for a healthier option.
