Fluffy Mini Pancakes

Delightful fluffy mini pancakes perfect for breakfast, easily customized with various toppings.

Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 3/4 cup milk (or dairy alternative)
  • 1 large egg
  • 2 tbsp melted butter (or oil)
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt until combined.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients, stirring gently until just combined. Lumps are okay!
  4. Heat a non-stick skillet over medium heat and pour small amounts of batter onto the skillet to form mini pancakes.
  5. Cook for 1-2 minutes until bubbles form on the surface, then flip and cook until both sides are golden brown.
  6. Serve warm with your favorite toppings.

Notes

For a dairy-free option, use almond or coconut milk and swap butter for oil.
